Who doesn’t love pancakes!?! Most kids love pancakes smothering in maple syrup. We’ve tried to make these a bit healthier as our kids would eat them every morning! By adding in banana the pancakes take on a natural sweetness without the need for syrup. Adding in only 3 chocolate chip morsels per pancake we’ve eliminated a great deal of the added sugar that many kids load on top. Although these may not be as healthy as our protein pancakes made with egg whites and rolled oats… this is a great option if you are moving in the “healthier” direction with breakfast ideas. Enjoy!
Ingredients:
- 2 ripe banana – smashed
- 1 large egg
- 3 1/2 tsp. baking powder
- 1/2 tsp. cinnamon
- 1 1/2 cup flour (your choice)
- 1 tsp. salt
- 1 1/4 cup milk
- 3 tbs. melted butter
- 1 tbsp. white sugar
- chocolate chip morsels
Heat griddle to 325. Pour about 1/2 cup batter onto griddle, once it starts to form on edges add in 3-4 chocolate chip morsels. Push morsels down until covered with batter. Flip pancakes once whenever edges look golden brown.
